My wife’s birthday continues as the inspiration for this Spanish Marinated Artichoke Appetizer. This is the second of three appetizers I served (who needs dinner after all these appetizers). The first appetizer was a SPANISH TORTILLA topped with a ROMESCO SAUCE. I totally loved this artichoke recipe. It is so simple to prepare and I believe it is elegant and pretty unique to serve.

Spanish Marinated Artichoke
The recipe could not be simpler. The recipe begins with cooking garlic and tomatoes in olive oil and white wine. Once the flavor is infused into the tomatoes and the garlic is toasty, the pan is taken off the stove and cooled. This garlicky infusion is poured over roughly chopped artichoke hearts and served.
How easy is that? I am totally recreating this for guests when I am crunched for time. I know they will say they love it and I will be sure to tell them how that this took me a long time to make and was quite complicated. NOT! I found the recipe at KITCHEN TO NIRVANA. Spanish Marinated Artichoke Appetizer
Continuing on my wife's birthday dinner with this super awesome, totally repeatable appetizer - Spanish Marinated Artichoke Appetizer.
Ingredients
- 1/2 Cup Extra Virgin Olive Oil
- 2 Tbsp Earth Balance
- 1 Head Garlic rough chop
- 10 Whole Cherry Tomatoes cut in half horizontally
- 2 Tbsp White Wine
- 2 Cans Artichoke Hearts rough chop
- 2 Tsp Black Pepper
- 2 Tsp Salt
Instructions

Add olive oil and vegan non-dairy spread into a skillet and turn heat to medium. Add the garlic and cook stirring often for 2 minutes. Stop cooking if the garlic is browning and immediately add the tomatoes. Cook for 2 minutes. Stir frequently.
Add wine and reduce for 2 minutes. Add the artichoke hearts and cook for 5 minutes.
Add the salt and pepper.
Serve and enjoy!
