Smoked Prime Rib

What do you think can be accomplished on a holiday weekend?  A lot!  It started Friday night with a Smoked Prime Rib.  I have always wanted to try to smoke a Prime Rib.  It turned out great.  It is a very interesting concept.  I suggest to all you people who like smoke to try this once.  My only comment is that the Prime Rib is such a strong flavor in and of itself, so I am not sure that by smoking that I am raising the Prime Rib to another level?

I paired it with the Pioneer Woman’s recipe for Mashed Potatoes.  I really like her use of cream cheese instead of sour cream in traditional recipes.  I find this makes for both a better consistency and a richer flavor.
