Scrambled Eggs & Sausage

In my house, we love breakfast for dinner.  This was breakfast for lunch.  So is it breakfast, or brunch then?  My youngest son asked shortly before lunch if he could have a friend over for lunch.  This must be a rhetorical question.  A chance to cook for more people.  Always.  And my son’s friend Daniel (shout out Daniel) has actually been a supporter of the blog and gives me some shouts out on FB.  Keep them coming.  Consider this meal a bribe.  Sorry guys, I am not above reproach when it comes to blog support.

Back to the meal.  I had maybe 30 minutes to pull this together.  I quickly looked in the freezer and saw that I had smoked sausage.  Throw it in a bowl of warm water and it should defrost in 15 minutes or so.  Brown the sausage.  Use the same pan to cook the eggs.  Add some cheese and you have great flavor.

Ingredients:

  • 1 smoked sausage, sliced
  • 10 eggs (8 whole and 2 egg whites), beaten
  • 1/3 – 1/2 cup of  shredded cheddar cheese
  • 1 tsp canola oil

Directions:

After thawing the sausage, heat a skillet on medium high heat with the oil.  When hot, add the sausage.  Cook until the sausage is browned on both sides – 10 minutes.  Remove from pan and drain. The pan will have a lot of oil from the sausage as well.  Pour out all but 1 tbsp.  Add the beaten eggs and stir when the bottom begins to congeal.  Keep cooking until the eggs have hardened.  Add the sausage back in.  Finish by adding the cheese and cooking until it melts.  Enjoy!
