I will say one thing I have learned to appreciate with my cooking is the importance of each item in the meal. Â This learning had given me a new appreciation for salads. Â I used to like to make my own salad dressing and that was good enough. Â Now I really try to add lots of flavor and color to the salad. Â With summer here, adding grilled corn is a really nice touch.
Recipe
Salad with Grilled Corn:
- Soak the corn with husks in a bowl of water for at least an hour before you plan to grill them
- Turn your grill on medium low and place corn including husks directly on the grates
- Cook for 20 – 25 minutes and you will have delicious corn with a little bit of char
- For the salad, chop romaine finely, add diced cucumbers, squash, zucchini, quartered tomatoes and the corn
