Roasted Turkey Breast

Typically, I say, if you are going to cook a turkey, just go ahead and cook a whole turkey.  In this case, I needed something for the non-red meat eaters and also thought, I would have some turkey for making sandwiches.  This breast was left on the bone so it had more flavor than a breast removed from the bone.  It also enabled me to make some stock afterwards.

The weather was rainy outside, so I had to cook inside.  I roasted it the oven after making a marinade, basting mixture.

Recipe
Roasted Turkey Breast:
Ingredients:

1/2 stick of butter, softened
1 1/2 tsp poultry seasoning
2 tsp each rosemary, thyme & sage
2 tbsp crushed garlic
3 stalks celery
1 large onion quartered
1 (15-ounce) container low-sodium chicken broth
1 tablespoon salt
1 tablespoon pepper
1 lemon
5-pound turkey

Directions:
Mix all the ingredients in a mixing bowl.  Place turkey in a skillet and pour the marinade over the turkey.  Cook at 325 degrees for approximately 2.5 hours.  Baste every 30 minutes during the cooking process.  Enjoy!
