Roasted Red Pepper Sauce

For the big game, you have to make sure you take care of all the different food tastes that your guests have.  I prepared a lot of comfort food.  Said differently, not necessarily healthy (but tasty).  So I decided to add some fish as an alternative.  Given that the superbowl is all about finger food.  I want to make it into a sandwich.  What you need is good bread and a good sauce to go along with the fish.

 
You can throw this recipe together in a matter of minutes.  I used a jar of roasted red peppers and fire roasted tomatoes.
 

 

Ingredients 

 
  • 4 whole roasted red bell peppers
  • 1/2 can of fire roasted tomatoes
  • 3 cloves garlic
  • 1/2 yellow onion
  • 1/4 cup red wine vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
 
Directions:
  1. Roast the garlic and onion under a broiler high for 3 minutes for the garlic and 8 minutes for the onion.  Be sure to turn the vegetables to roast on all sides. Remove from heat.
  2. In a food processor combine all ingredients and pulse until fully mixed.  I ended up adding just a little bit of mayonnaise (1 – 2 tbsp) to thicken the sauce.  Enjoy.
