Red Velvet Cupcakes

Valentines is such a great holiday.  Even if it was created by that card company, any holiday that gives us guys a chance to focus on our wives is a huge plus.  We don’t have to remember anything.  We don’t have find the perfect gift.  A card and something sweet and we are in like Flint.  For my wife, I have to buy some candy, not baked goods.  I need to buy some Twizzlers, some Hot Tamales and some Sugar Babies and I am sure to get a smile, kiss and a hug.

If you are a little more adventurous, then try these Red velvet cupcakes.  The cupcake is actually from a mix and if you can read the box, you can do this part.  The frosting is pretty easy if you know where to find a hand mixer.  Think of it as a tool and you will still be a tough guy.  I wonder if you could mix it with a power drill.  Note to self, give that a try.

Recipe
Red Velvet Cupcake:
For the cake, just buy a box of red velvet cake mix and simply follow the box instructions.

Frosting Ingredients:

  • 8 oz packages cream cheese, softened
  •  1/4 cup butter, softened
  •  1 cups sifted confectioners’ sugar
  •  1 teaspoon vanilla extract
Directions:
In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners’ sugar. Frost donuts and enjoy!
