This is such an awesome time of year with amazing basketball games going on. My family, and especially, my daughter go crazy this time of year with their love of the University of Michigan. Did you see the game Saturday night where they made a shot with no time on the clock to win the game? AMAZING! With all great sporting events, we all think about food and bringing people together around food. I know as a food blogger, this is a great opportunity for me to get creative and make something new for family and friends.
I love creating so much. This recipe for Red Pepper Sauce Chicken Bake was like being on Food Networks “Chopped”. I wanted to create a recipe that used the new Coca-Cola® Zero Sugar and NABISCO’S RITZ® Crackers in one recipe. I am here to say that the Coca-Cola® Zero Sugar worked awesomely. I reduced it and it got a nice sweetness to it. I topped the the bake with a mixture of cheese and the crackers to add really good texture to the overall dish. Check out this LINK

I picked up my main ingredients to create my winning basket from my Target Store and the pictures below show how easy it was to find them.
Getting back to the recipe, how could you not love it. It has melted cheese, crunch from the crackers and sweetness from the Coca-Cola® Zero Sugar. Or top the RITZ® Crackers with the chicken and cheese and pair it with a refreshing Coca-Cola® Zero Sugar for a wonderful snack or appetizer. What a great combination to serve for friends and family while enjoy the games.

Red Pepper Sauce Chicken Bake
A roasted red pepper sauce with Coca-Cola® Zero Sugar added to create this Red Pepper Sauce Chicken Bake - also served on RITZ® Crackers.
Ingredients
Pulled Chicken
- 6 Whole Chicken Breasts
- 3 Cups Chicken Stock
- 2 Tbsp Adobo Seasoning
- 1 Tbsp Black Pepper
Red Pepper Sauce
- 2 Whole Red Peppers charred
- 3 Cloves Garlic chopped
- 1/4 Whole Red Onion chopped
- 8 Ounces Coca-Cola Zero Sugar
Chicken Bake
- 1/4 Whole Red Onion diced
- 1 Tbsp Olive Oil
- 2 Tbsp Adobo Seasoning
- 2 Tsp Cumin
- 1 Tsp Black Pepper
- 2 Cloves Garlic diced
- 1 Tbsp Paprika
- 3 Sticks Smoked Mozzarella shredded
- 2 Ounces Cheddar Cheese shredded
- 1 Sleeve RITZ Crackers
Instructions
Pulled Chicken

Combine all the pulled chicken ingredients in the pressure cooker and cook for 35 - 40 minutes. Let cool and pull with two forks. Set aside.
Red Pepper Sauce

Combine all the red pepper sauce ingredients in a blender. Blend into a nice puree. Set aside.
Chicken Bake

Add the oil to a Dutch oven on medium high heat. Add the onion and spices and cook for 2 - 3 minutes. Add the garlic and cook for 1 more minute. Add in 1/2 of the Coca-Cola Zero Sugar and reduce until it is almost gone. Add in the pulled chicken and the paprika. Mix well. Next, add in the red pepper sauce blend and mix through. Add in the remaining Coca-Cola Zero Sugar and mix.
Pour the chicken mixture into a baking dish. Top with the shredded cheese and the crackers. Put into a 325 degree oven and bake for 10 minutes.
Serve and enjoy!
