I am OK with liking hummus so I have always wanted to try it with red peppers because I like peppers so much. Â This hummus was quite good and had a really good kick to it.
Recipe
Red Pepper Hummus (adapted from baked-in):
- In the bowl of a food processor, combine one 14 oz can of chick peas, 3 minced garlic cloves, 3/4 cup of roasted red peppers (3 full peppers from a jar), 2 tbsp tahini, 3 tsp lemon juice, 1 tsp dried basil, 1/2 tsp each of smoked paprika, cumin, cayenne pepper and salt and finish with 1/4 tsp of black pepper – use long  pulses to mix – approximately 2 minutes
- Remove and chill
- Cut up any variety of vegetables or pita to dip into the hummus.
