Red Pepper Hummus Roll Ups

Red Pepper Hummus Roll Ups – layers of vegetarian flavor.  There are many components to this dish.  It begins with red pepper hummus; adds tzatziki sauce and finished with spiralized vegetables wrapped in a tortilla.  I have made variations on this before.  I just enjoy every layer of this dish.  Great dishes have detail and care in each component.  And in this case, each component can stand on its own.  When the flavors are merged, the result is an unexpected depth of flavor.

Ingredients:

  • Red Pepper Hummus
  • Tzatziki Sauce
  • 1 carrot, spiralized
  • 1 daikon, spiralized
  • 1 zucchini, spiralized
  • 6 radishes, sliced thin
  • 6 flour tortillas

Directions:

Please click on the links above if you want the recipes for the red pepper hummus and tzatziki sauce.  Use the spiralizer to slice, is that what you call it, the vegetables.  Slice the radishes pretty thin.  To assemble the sandwich, appetizer, lay out the tortilla on a flat surface.  Top with a thick layer of the hummus.

Next, add dollops of the tzatziki sauce on top of the hummus.

Next, grab a whole bunch of the veggies, as much as you want, and top on the two previous layers.  Put some radishes evenly over the veggies.

Finish, by rolling up the tortilla.

Serve and enjoy!
