I have had quinoa but never cooked with it. Â It is my new favorite side. Â I have heard but need to research that it is super healthy for you. Â Further, I understand it is gluten free which is great for so many people. Â It takes on the flavors you put in so you can really have fun with it. Â I started pretty straightforward and used tomato sauce for color and flavor and added the holy trinity of vegetables to provide more texture.
Recipe
Tomato Quinoa (adapted from All Recipes):
- In a saute pan on medium heat, add 1 tbsp olive oil and 1 1/2 diced carrots, 2 stalks of celery and 1/2 of a diced yellow onion
- Cook for 2 minutes then add 1 cup of the quinoa and continue cooking for 5 minutes
- Next add 1 cup of tomato sauce and 2 1/2 cups of water and 1 tsp of ancho chili powder, 1/2 tsp each of garlic and oregano and mix well
- Cover and cook for about 30 minutes – until the liquid evaporates – fluff and serve.Â
