Potato Crusted Salmon

I have always wanted to try and make this dish.  I would say my first effort was OK.  Taste was good but I did not get the crust on the potatoes I wanted.  Note to self – make sure pan is really hot. The dish was topped with a mustard shallot butter sauce.

Recipe
Potato Crusted Salmon:

  1. Peel and shred 2 baking potatoes and squeeze out as much liquid as possible
  2. Combine 1/4 cup each dijon and sweet & spicy mustard and spread over the salmon fillets
  3. Take the potato mixture and press onto each side of the fish
  4. Heat 2 tbsp olive oil in a pan over medium high heat and cook each side about 3 minutes
  5. Finish cooking in a 350 degree over for 5 – 6 minutes

Mustard Shallot Butter sauce:

  1. Take 4 tbsp of room temperature butter, 1 diced shallot, 2 tbsp sweet & spicy mustard, 2 tbsp lemon juice, salt and pepper to taste and warm until combined and serve immediately.

    I was just looking for a salmon recipe – we eat a lot of salmon. I have to try this; it looks wonderful!
