This potato cheese soup starting as an idea of what I am going to do with the leftover potatoes I had sitting in my lazy Susan.  So I know you are like me, and now, your mind is asking yourself where did this term develop.  My research says we don’t know.  This link to wikipedia has lots of history but no direct connection to the name.  So I am sorry but your, and my curiosity will not be satiated with this post.
Speaking of satiated, why don’t I get back to the post.  Potatoes and cheese are such a natural together.  I have seen them paired in many ways but rarely thought of this pairing as a soup.  But it makes total sense.  It is such a natural pairing.
Ingredients (adapted from Allrecipes):

4Â potatoes, peeled and quartered

1 small carrot, finely chopped
Directions

Put back on to the stove and cook, stir over medium heat until thickened and bubbly. Â Remove from heat. Â Add cheese and stir until cheese is almost melted.
