Plum Balsamic Vinaigrette

In our endeavor to learn to cook, every so often we have a major breakthrough.  This was one of those times.  I know, most people are thinking that a salad dressing is pretty easy.  I have been making dressings for awhile and have had pretty good results.  However, I have wanted to be able to have a go to base and then vary a prime flavor.  I did it!

I can’t wait to try this again and see if my base will work with other ideas – first, yellow peppers.  This evening I used plums.  I served this salad with an Asian BBQ Salmon and used plums in my BBQ sauce.  So I wanted to have a flavor go through my whole meal and the attempt was made to add the plums to the salad dressing.  This recipe is a keeper.

Recipe
Plum Balsamic Vinaigrette:

  1. Start by taking the skin off 2 plums and dice
  2. In a food processor, add 6 tbsp olive oil, 2 tbsp balsamic vinegar, the diced plums, 1/2 tsp sugar, and salt & pepper to taste
  3. Blend until completely mixed and it is ready to serve
