So simple yet so flavorful. I have really come to love peppers. The colors, whether red, green, orange or yellow all have such unique tastes. Paired with the acidity of the tomatoes and the pepper taste of the arugula, just combine so well together. Don’t forget the sweetness of the red onion. You do not even need a dressing to adorn this Pepper Tomato Salad. However, the better comment is actually that this salad would support so many different dressings. The other wonderful thing about this salad is the colors. If it is true that you eat with your eyes, then the beautiful colors of this Pepper Tomato Salad draw you in to just devour it!
I actually started trying to improve my salads because my wife would be satisfied every day, if all we ate was a salad. Once, I started focusing on improving my salads, I really started enjoying making and eating salads. I really like to throw so many things into a salad and really focus on adding lots of color. Don’t you like the accent of the yellow tomatoes into this salad?


- 1/2 red pepper, rough dice
- 2 yellow tomatoes, quartered
- 2 slices red onion
- 1 bag arugula
- Cut the peppers, tomatoes and onion as described above.
- Put in a bowl or serving dish and add the arugula.
- Finish by mixing.
- I recommend a mustard vinaigrette for the dressing.
