Parmesan Crusted Swai Fillets & Cheese Cauliflower Patties

I needed to throw something together reasonably quick, generally healthy and good enough to get the seal approval from my toughest food critic, my youngest son (he watches too many cooking shows with me).  The Parmesan Fish recipe I just varied from a recipe I pulled up on line to suit our tastes and the Cheese Cauliflower patties was pulled from a recipe I saw on Pinterest (I am new to this site and still learning to work with the site. I lost the poster and I will attempt to find so I can give him his props).  I call each of these healthy because no butter was used, the swai patties were washed in lemon juice and each dish was sauteed in a little olive oil.

Recipes
Cheese Cauliflower Patties
  1. Take 1 head of cauliflower and cut in to florets
  2. Next bring water to a boil in a double boiler and cook teh cauliflower until soft about 10 minutes
  3. Remove from double boiler and let cool but while still warm mash with a masher.
  4. Mix cauliflower with 1/2 cup of bread crumbs, 1/2 cup of cheddar cheese, salt and pepper to taste (I added in a little bit of cayenne to provide a punch)
  5. Heat oil in a pan, form mixture into patties and fry about 2 -3 minutes per side (note find the right temperature for you pan to get to golden brown – I used medium to medium high)
Parmesan Crusted Swai Fillets
  1. Start with nice fillet and pat dry
  2. Mix together 1/4 cup of bread crumbs, 1/4 cup parmesan cheese, salt and pepper to taste and add 1/4 teasooon cayenne
  3. In a separate bowl, pour in 1/2 of lemon juice
  4. Simply run the fillets through the lemon juice and dredge in your breading mixture
  5. Cook in pan with oil over medium heat about 3 -4 minutes per side depending on the thickness of the fillets
