I have been seeing the jackfruit craze. Then, I saw or heard about using oyster mushrooms as a meaty alternative.
Jump to RecipeMy Mushroom & Jackfruit Gyros is more mushroom than jackfruit. So I did not learn about the texture of the jackfruit in this recipe. I have 4 more cans to try other ideas. The texture of the oyster mushrooms was awesome. You need to find the really big oyster mushrooms. I have only seen them at Asian grocery stores. The shred with a fork just like you would do with pork or chicken.
Once the oyster mushrooms and jackfruit are shredded, they are mixed with spices and browned in a skillet. It is fascinating to watch the color change from the whitish beginning to the brown in the end. I guess the color transformation reminds me of the color change I see when making a roux for my gumbo.
The spices that bring out the familiar Greek flavor includes cinnamon, sweet paprika, chili powder, oregano, soy sauce, molasses, white pepper, salt, liquid smoke and apple cider vinegar. It is really amazing how good and similar this meat tasted. Finishing the dish with the traditional tzatziki, oil & oregano marinated red onions and tomatoes brings it all together.

Mushroom & Jackfruit Gyros
Don't be fooled, or maybe you should be, by this vegan Mushroom & Jackfruit Gyros. The dish is so meaty and tastes just like the original.
Ingredients
- 5 Whole Large Oyster Mushrooms shredded
- 20 Ounces Jackfruit
- 1 Whole Yellow onion diced
- 2 Tsp Sweet Paprika
- 2 Tsp Chili Powder
- 1 Tbsp Oregano
- 1 Tsp Cinnamon
- 2 Tsp Salt
- 2 Tsp Ground Black pepper
- 3 Tbsp Molasses
- 1 Tbsp Liquid Smoke
- 1 Tbsp Olive oil
Instructions

Begin by shredding the mushrooms and jackfruit with a fork. Set aside.
Heat the oil in a skillet on medium heat. Add the onions and spices and cook down until softened – about 5 minutes. Add the mushrooms and jackfruit and cook down for 10 – 15 minutes getting out the liquid and browning. Add the molasses and liquid smoke and simmer for 5 minutes. That's it.
Serve with on a pita with tzatziki, tomatoes and marianted red onions. The onions were marinated in oil and oregano. Enjoy!
