There are so many vegetables to use in the summer.  Today’s dinner theme was Mexican turkey burgers. So I added some cilantro to 2 kinds of tomatoes, cucumbers and shallots.  Top with a mustard dressing and you have a light and tasty side.
Recipe
Mexican Summer Salad:
- Halve about 15 sweet tomatoes and cherry tomatoes and place in a bowl
- Chop a full cucumber in a good size dice and finish by adding 2 finely chopped shallots
- For the mustard dressing, add 2 tbsp dijon mustard, 2 tbsp white wine vinegar, 1 tbsp garlic, 1 tsp each salt and pepper and add about 1 cup of olive oil
- Dress salad about 10 minutes before serving.Â
