Mexican Omelet

Looking for a light dinner, trying to lose a little weight and wanting to keep the Mexican theme going, what more flexible food is there than the egg?  Cut up some onions, various peppers and some cheese and you have a great combination.

Recipe
Mexican Omelet:

  1. Heat 1 tbsp of olive oil over medium high heat and add turkey taco meat (leftovers from the night before) and cook for approximately 3 minutes
  2. To the same pan add 1 slice of a yellow onion, 1/4 of a jalapeno pepper diced and 2 tbsp of diced pablanos and cook for 3 – 3 minutes
  3. While cooking add 1 tsp ancho chilli powder and crack 4 eggs (1 with whites only) in a bowl and mix thoroughly
  4. Finish eggs by adding 1/4 cup of milk mix thoroughly
  5. Pour into meat and vegetables in pan and cook until eggs are firm
  6. Once the eggs are firm, add 1/4 cup of shredded Mexican blend cheese and serve with salsa on the side
