Looking for a light dinner, trying to lose a little weight and wanting to keep the Mexican theme going, what more flexible food is there than the egg? Â Cut up some onions, various peppers and some cheese and you have a great combination.
Recipe
Mexican Omelet:
- Heat 1 tbsp of olive oil over medium high heat and add turkey taco meat (leftovers from the night before) and cook for approximately 3 minutes
- To the same pan add 1 slice of a yellow onion, 1/4 of a jalapeno pepper diced and 2 tbsp of diced pablanos and cook for 3 – 3 minutes
- While cooking add 1 tsp ancho chilli powder and crack 4 eggs (1 with whites only) in a bowl and mix thoroughly
- Finish eggs by adding 1/4 cup of milk mix thoroughly
- Pour into meat and vegetables in pan and cook until eggs are firm
- Once the eggs are firm, add 1/4 cup of shredded Mexican blend cheese and serve with salsa on the side
