I wanted to try some different smoke recipes and have started looking through my Smoke and Spice recipe book. Â So today I tried these smoked peppers. Â I love the look of stuffed peppers and I utilized different colors to add to the look.
Recipe
Maque Choux Smoked Peppers:
- Slice off tops of peppers about 1/2 inch from top, remove cores and stand upright (slice a little off the bottom if peppers do not stand)
- Melt 3 tbsp butter and 2 tbsp vegetable oil
- Add 2 cups of corn, 1 medium onion and 1/2 a green pepper
- Soften vegetables (about 10 minutes), then add 1/2 tsp of white pepper and salt to taste
- Finally, add 1 cup of chicken stock (I had smoked chicken stock) and 1/4 cup half and half (I used low fat) and reduce by half
- Remove from heat and in a separate bowl combine vegetables with 2 cups breadcrumbs and 1 egg white beaten
- Stuff peppers and use toothpicks to close lid
- Prepare smoker  to 200 – 225 degrees and cook for 65 – 75 minutes
