It is summer and it is time for grilling. We love to grill all types of things in the summer from steak to fish, vegetables to corn and fruit for dessert. Yum. Grilling is so versatile. But grilling alone does not create a finished recipe. The key to a successful dish are the accents to the grilled food. So whether that is a side or a topping, think through your recipe so that the final dish is totally balanced. For me, when grilling fish, I have really gotten into creating a fruit salsa. It is so fresh, so summer so tasty. This mango salsa is a perfect complement to fish, and especially, this salmon. This mango salsa needs a hearty fish.
Ingredients:
- 1 mango
- 1/4 cup red pepper, diced
- 1 green onion, chopped
- 2 tbsp plus cilantro, chopped
- 1 jalapeno, finely chopped
- 2 tbsp lime juice
- 1 tbsp lemon juice
Directions:
In a medium bowl combine all the ingredients and let sit for 30 minutes. Now that was easy. When ready, top on top of the fish.
Serve and enjoy!




I can remember the first time I ate mango salsa, it appealed to me that much. This is a wonderful version of that.
