Loaded Salad

As I continue on growing in my cooking journey, I have gained a much greater appreciation for salads.  I am constantly looking to include more and more ingredients in my salad, but equally important, is making it visually appealing by having a lot of colors in it.

In this case, I mixed a couple of types of lettuce, a variety of peppers, yellow tomatoes, avocados and corn. The end result was a picturesque salad (you be the judge).

Recipe
Salad:

  1. 1 head each of romaine and red leaf lettuce
  2. 2 ears of grilled corn
  3. one dozen yellow cherry tomatoes
  4. 1/4 each of red, green, yellow, and orange peppers
  5. 2 sliced avocados.

    Sometimes when I do salads with avocado I just have that be the dressing and add some salt and pepper. Yum!

    I make really colorful salads and all my lunch partners are jealous. I prepare 4 days worth of salads on Sunday night and place them individual plastic containers. They stay very fresh and I save so much time doing it that way. I wasn’t sure preparing them ahead of time would allow them to stay fresh but they do. I add everything I can think of to add color but my “musts” are carrots, broccoli slaw, green onion, cherry tomatoes. I love to chop up sugar snap peas, mushrooms,etc.

    For a dressing, I like Newman’s Lite Balsamic Vinegar.
