Blackened Salmon with Mango Salsa

We have had a whole salmon in the freezer for a week.  I had mangoes left over from my mango margaritas. How does one merge these two ingredients.  Easy.  Give the salmon some bite and make a salsa out of the mango.

I totally made up the rub putting together cayenne, smoked paprika, fancy paprika, garlic powder and Old Bay seasoning.  I have found just having a general idea of spices you like makes it easy to throw together a rub that is quite tasty.  No directions needed.

For the mango salsa , I did try to look up a couple of ideas but there were not many posts and they called for cilantro which I did not have in the house.  So go with your gut and what you have in the house.  I started with shallots and added fresh lime juice and then the mango.  I knew I had to balance some acidity with the sweetness of the mango.

Recipe
Blackened Salmon with Mango Salsa:
Blackened Salmon;

  1. Mix 2 tbsp each Old Bay Seasoning, Smoked Paprika, Fancy Paprika and garlic powder with 2 tsp cayenne
  2. Rub the salmon on both sides with olive oil and spread the spice mixture liberally on one side
Mango Salsa:
  1. Finely chop 1/2 of a shallot and squeeze 1/2 of a fresh lime into the shallot and let sit for 5 minutes
  2. Meanwhile, dice up one mango and add to the shallot lime juice mixture
Final Preparation:
  1. Cook the salmon on your grill over low heat, spice side down for 6 – 7 minutes and turn and cook for 3 more minutes
  2. Remove from grill and top with the mango salsa.
