The inspiration for these Kingsized Smoked Beef Ribs is my love of smoking, love of ribs and the fact that I do not eat pork. I love the tactile experience of eating ribs. So I have made beef ribs a number of times to satisfy this craving and I have smoked ribs a couple of times too. Here are two links to earlier versions – ONE & TWO and these were good. However, this time I nailed the recipe.
The recipe to make these beef ribs is so simple yet has so much flavor. For those of you that own a smoker, or have made smoke recipes, you know the amazing flavor that can be infused into the food you are making. A beef rib is the perfect food for this smoking for two reasons: One)Because low and slow cooking is great for tougher cuts of meat; and two)the slow cooking gives plenty of time for the smoke to infuse the meat.
The recipe is so easy to make and so easy to follow. It begins with buying the right ribs. Beef ribs are quite inexpensive so go to a good quality grocery store, or butcher, to buy the best they have. Actually, the challenge is finding grocery stores that carry beef ribs. So keep your eyes open the next time you walk through the meat section of your grocery store. These beef ribs are seasoned simply with salt, pepper and LAWRY’S SEASONED SALT. The final flavor addition is the hickory and cherry woods used for smoking. The ribs are cooked for 2 – 3 hours. YUM!
