I made these Jalapeno Popper Stuffed Meatballs for a Super Bowl party I went to.  Yea, I know.  The super bowl was almost two months ago. That does not mean that I shouldn’t share this recipe with you.  I love this idea and I loved these meatballs.  I really, really like jalapenos and have always loved how jalapeno poppers look.  So how about a spin on the jalapeno popper that would be fun to eat and fun to serve at a party.  This appetizer was easy and fun to make.

Jalapeno Popper Stuffed Meatballs

The Super Bowl is synonymous with parties and food.  It is typical that the food served at Super Bowl parties is finger food.  It is fun to eat and easy to eat so you can keep watching the game.  In past years, I posted a few rounds ups to help prepare people for their parties.  These ideas are good any time of year.  Check out these few links for great recipes and fun ideas from a series I used to run called the Friday Five – Super Bowl 1, Super Bowl 2 and Super Bowl 3.

To make these Jalapeno Popper Stuffed Meatballs you only need a few ingredients.  The main ingredients are ground turkey (you can certainly use beef), mozzarella cheese and jalapenos.  Now, my regular audience knows I have a pantry full of Mexican spices.  I kept the addition of spices very simple – GO FIGURE.  I used adobo seasoning as the main spice and added cumin, black pepper and Mexican oregano.  These spices were mixed into the ground turkey.  The most difficult, please not the sarcasm, part of this recipe was making a thumbprint into the ground turkey meatballs so I could add a piece of jalapeno and mozzarella.  I cooked the meatballs in an oven.  It is that easy.

I’m not a meat eater, but my husband is and these look like he would devour them. He loves it when I make mozz stuffed meatballs, but this is a whole new level. Love it!

You got me at jalapenos. I’m thinking about using minced turkey meat instead.

I too love jalapenos in most anything. Minced turkey would work real well too.
