Heirloom tomatoes with a Basil/Mint Dressing

Simple but flavorful.  I wanted to change up having just another salad.  So I created a light dressing by mixing fresh basil and mint with a fresh lemon and olive oil.  Voila – put on top of a tomato and your done.  How easy was that?

Recipe
Basil Mint Dressing:

  1. In a food processor, mix together 6 – 8 basil leaves with 3 – 4 mint leaves.
  2. Juice 1 lemon and pulse
  3. Add about 1/2 cup olive oil in slowly while the Cuisinart is on
  4. Slice tomato and serve
