Grilled Sweet Tomatoes Onion & Basil – Summer Caviar

My son had requested cheeseburgers and I was thinking all day about this big container of sweet tomatoes that I bought over the weekend.  How do I pair it with a burger.  Voila!  Throw it on the grill.  Grab some fresh basil at the store while buying my ground beef, slice up some onions, throw it on the grill and dress with olive oil.  How easy.

Recipe
Summer Caviar:

  1. Wash about 20 sweet tomatoes and take 3 slices of a sweet onion and put into a BBQ vegetable tray and put on the grill for 15 minutes on low turning every few minutes
  2. Remove from grill;  meanwhile, chop up a small container of fresh basil and add the colonels of 1 ear of corn (I had it grilled from a couple days earlier)
  3. Put all the ingredients in a mixing bowl and add 2 tbsp olive oil and 1 tsp each salt and pepper, mix well and there you go.
