Grilled Haloumi Pomegranate Salad from Feed Your Soul Too

HALOUMI is a Mediterranean/Middle Eastern cheese that stays hard.  It is a hard, unripened cheese.  There is nothing better than grilling this cheese.  The cheese gets a nice crispness on the outside and doesn’t melt. It acts like the Indian version – Paneer.  Or similar to the Mexican version of Cotija.

I wish I could tell you that there were so many steps in this recipe.  That it took me hours to put together.  That I marinated the cheese overnight.  That the marination infused the cheese with such amazing flavor but I can not.  There is just not much to do to have one of the best experiences with cheese as you will with this haloumi.  When I made a recipe with the PANEER, I did marinate it with curry powder and oil.

The haloumi is a salty cheese.  So both sweetness and acidity are needed to balance the flavors.  I used pomegranates for their sweetness and texture.  I used fresh lemon to get the acidity into the salad.  I am normally not satisfied with just a salad for dinner.  The addition of the haloumi makes this a very satisfying meal.  I added cucumbers, multi-colored peppers and radishes for more texture.

Grilled Haloumi Pomegranate Salad

Ingredients

  • 12 Ounces Haloumi cheese
  • 1 Tbsp Olive Oil
  • 1 Whole Lemon juiced
  • 2 Whole Radishes cut in matchsticks
  • 3 Whole Persian Cucumbers diced
  • 1 Whole Yellow & Orange Pepper diced
  • 1 Head Green Leaf lettuce
  • 12 Ounces Fresh Spinach
  • 1/2 Whole Pomegranate seeds

Instructions

  1. Begin by heating the olive oil in a saute pan. Once hot, add the cheese and grill on both sides until you get a nice char. Should only take 2 - 3 minutes per side. Once done slice into strips. Set aside.

    Assemble the salad by mixing the rest of the ingredients in a big bowl. Squeeze the lemon over the salad and mix well.

    For serving, place as much salad in your bowl as you wish to eat and top with three strips of the haloumi cheese.

    Enjoy!
