I wanted to grill some chicken to have to throw in a salad for lunch but also a nice meal. Â The accompaniment was some cubed squash and zucchini marinated in a balsamic mixture.
Recipe
Grilled Chicken and Balsamic Marinated Grilled Vegetables:
- Season the chicken with 1 tbsp each of poultry seasoning and smoked paprika and set aside
- In a mixing bowl, put in 1/4 cup each of balsamic and olive oil; add 3 cloves of minced garlic and 1 tsp salt – mix thoroughly
- Cube 2 zucchinis and 1 yellow squash and place on bamboo spears (that have been soaked for 2 hours)
- Put kabobs on to a baking tray and cover with the marinate and place in the fridge for 1 hour
- Heat grill to medium low and place chicken on grill for 20 minutes skin side down and turning 10 minutes into the cooking time
- When you go to turn the chicken, place the veggies on the grill to turning 1/2 through the 10 minute cooking process
- Let rest for a couple of minutes and serve.
