Grilled Chicken with balsamic marinated grilled Vegetables

I wanted to grill some chicken to have to throw in a salad for lunch but also a nice meal.  The accompaniment was some cubed squash and zucchini marinated in a balsamic mixture.

Recipe
Grilled Chicken and Balsamic Marinated Grilled Vegetables:

  1. Season the chicken with 1 tbsp each of poultry seasoning and smoked paprika and set aside
  2. In a mixing bowl, put in 1/4 cup each of balsamic and olive oil; add 3 cloves of minced garlic and 1 tsp salt – mix thoroughly
  3. Cube 2 zucchinis and 1 yellow squash and place on bamboo spears (that have been soaked for 2 hours)
  4. Put kabobs on to a baking tray and cover with the marinate and place in the fridge for 1 hour
  5. Heat grill to medium low and place chicken on grill for 20 minutes skin side down and turning 10 minutes into the cooking time
  6. When you go to turn the chicken, place the veggies on the grill to turning 1/2 through the 10 minute cooking process
  7. Let rest for a couple of minutes and serve.
