Well people are doing some pretty outlandish stuff out in the food world these days. Â So the question is “How do I get in on the fun?”. Â With that said, my audience (my family) is not exactly ready to step off the ledge for one of my creations (maybe Sam is and Nate has certainly been a good sport). Â If I start with a grilled cheese, I have everyone in the family still with me. Â If I make my Mac ‘N Smoked Cheese, I still have everyone with me but my wife and daughter will start to wonder and my daughter will need her lactose pill while my wife will be thinking, I need to try it to make him happy. Â Â Then it hit me, why not add a polish sausage to the mix. Â I am thinking I hit a home run. Â This is worthy of Diners, Drive-Ins and Dives and only the men in my family. Â Sam was out of town, so he will have to wait to try the next one but Nate and his finicky friend got to dig in. Â The response was pretty favorable. Â Did I mention, I sauteed the Polish in a skillet with onions and jalapenos? Â
- Make a roux with 3 tbsp each butter and flour, mix and cook for 1 minute
- Add 1 1/2 cups of fat free 1/2 & 1/2 added slowly and finish by adding 1/4 cup of chicken stock; bring to a boil and reduce to a simmer
- Add 8 oz of shredded medium cheddar and 6 oz of shredded smoked cheddar and stir until fully incorporated
Polish Sausage:
- In a skillet add 2 tbsp olive oil on medium heat; add 1 diced jalapeno and 1/2 of a diced yellow onion and cook for 2 minutes
- Cut the sausages in half lengthwise but just far enough through so they can be placed flat in the skillet
- Grill until charred – about 10 minutes
Grilled Cheese:
- Take 2 pieces of white bread and place on a buttered griddle
- Add 1 piece of American cheese to each piece of bread and grill for 3 – 4 minutes on 325 degrees
Sandwich Assembly:
- Take the 1st piece of the grilled cheese and top with the sausage and some of the pepper and onions
- Grab a good spoonful of the Mac n Cheese and top the sausageÂ
- Finish with the 2nd piece of the grilled cheese and enjoy.
