I saw this recipe and immediately thought of my wife and daughter. Â It has chicken and is made with a light sauce. Â But when it said gravy, I thought it had even more appeal for me. Â I have not made a pasta this way before. Â It was easy, flavorful and richer than making a dish primarily olive oil based.
Recipe
Pasta with Garlic Gravy and Lemon Chicken:
Lemon Chicken:
- Make a marinade including a few springs of fresh thyme, 1/2 cup of olive oil, 1/4 cup lemon juice, 1 tsp salt and 1/2 tsp black pepper
- Take 6 thinly sliced chicken breasts and a freezer bag and add the marinade – massage the marinade into the chicken and let sit for at least an hour
- Saute with the marinade on medium heat for 2 – 3 minutes per side and set aside and reserve the liquid
Garlic Gravy:
- Using the same saute pan and the reserved liquid, add 1/2 stick of butter and 1 tbsp olive oil and cook for 2 minutes
- Add 2 tbsp all-purpose flour and cook for about 2 minutes thickening the sauce
- Add a spoonful of chopped garlic (I used the already minced garlic in a jar) and cook for 1 minute
- Add 2 1/2 cups of chicken stock and raise heat; reduce the gravy by 1/3Â
Prepare your favorite pasta and when al dente, add to the gravy. Â I also added red and yellow cherry tomatoes, 2 full leaves of fresh basil lightly chopped and salt and pepper to taste. Â 2 minutes before serving, add back in the chicken. Â Enjoy.

I love garlic, I love lemon and I LOVE LOVE LOVE pasta, so this dish looks absolutely wonderful to me. YUM!
