What is your favorite ethnic type of food? I love so many but today is Greek night!
So I wanted to cook my fish in a different method but needed a theme for the meal. I had some friends coming over and had planned a Greek meal. But the plans changed and the Greek theme never came about. But I had researched the Greek theme and went to the Chicago classic – GREEK ISLANDS – to get some ideas. I really liked the Greek Tomato Rice and had stored the concept, #RememberedTheRecipe for future use.

When you check out a menu at a restaurant, the only problem is that you do not get the recipe. WHAT TO DO? Google it. Well I found the recipe. That’s what I did to find out how to make this dish and came up with a food blogger known as MIA KOUPPA that blogs about Greek food.
I have mentioned before that part of the experience of becoming a good cook is knowing what you like and seeing that in the ingredients. Not all recipes are complicated and this Greek Tomato Rice is simple and so flavorful. The dish is spiced with oregano and lemon pepper. I, also, really like the color you get from the red tomato sauce and the green of the spinach.

Greek Tomato Rice
Ingredients
- 2 Cups Rice
- 3 Cups Spinach
- 1/2 Whole Red Onion diced
- 8 Ounces Tomato Sauce
- 2 Tsp Salt
- 1 Tbsp Oregano
- 2 Tsp Lemon Pepper
- 1 Tsp Greek Olive Oil
- 1 Cup Chicken Stock
- 1 Cup Water
Instructions

Rinse the rice in cold water to wash off some of the starch and set aside. Rinse the spinach well and set aside. Add the olive oil to a skillet on medium heat and add the red onions and lemon pepper cook for 2 – 3 minutes. Next, add the spinach and remaining spices to the skillet and wilt for 2 minutes. Add the rice on top of the wilted spinach and mix well. Add the water, chicken stock and the tomato sauce to the pot. Cover and cook over medium heat for approximately 30 minutes. Check for the doneness of the rice. If there is too much liquid, continue cooking with the top off. If the rice is not done, add some more water if needed. Remove from the heat, and let sit a few minutes before serving.
