Greek Tomato Rice

Ingredients

  • 2 Cups Rice
  • 3 Cups Spinach
  • 1/2 Whole Red Onion diced
  • 8 Ounces Tomato Sauce
  • 2 Tsp Salt
  • 1 Tbsp Oregano
  • 2 Tsp Lemon Pepper
  • 1 Tsp Greek Olive Oil
  • 1 Cup Chicken Stock
  • 1 Cup Water

Instructions

  1. Rinse the rice in cold water to wash off some of the starch and set aside. Rinse the spinach well and set aside.  Add the olive oil to a skillet on medium heat and add the red onions and lemon pepper cook for 2 – 3 minutes.  Next, add the spinach and remaining spices to the skillet and wilt for 2 minutes.  Add the rice on top of the wilted spinach and mix well. Add the water, chicken stock and the tomato sauce to the pot.  Cover and cook over medium heat for approximately 30 minutes.  Check for the doneness of the rice. If there is too much liquid, continue cooking with the top off. If the rice is not done, add some more water if needed. Remove from the heat, and let sit a few minutes before serving.
