This is the 2nd installment of the Friday Five – Mexican addition 2 to offer you (and me) with ideas to try this weekend.  Cinco De Mayo day is coming up Monday.  So that is as good a reason as anyone to make Mexican food.  So we begin this journey with a drink.  A margarita of course.

This is an Organic Tequila Paloma Cocktail from Culinary Ginger.

Our next offering is presented both as an appetizer or a side – Roasted Potato Cups with Loaded Guacamole from She Likes Food.

The next pure appetizer brings some Mexican/Asian fusion together.  These are Quesadilla Wonton Cups created by The Sweet Chick.

This Cheesy Chicken Enchilada Quinoa Bake is created by Cooking for Keeps.

You say you need another side and maybe some fries.  Check out these Tijuana Street Fries from Half Baked Harvest.

Our meal would not be complete without dessert.  Our first offering is a Margarita Cookie (now were talking) from my friend Tara at Noshing with the Nolands.

We finish our Mexican fiesta with a spin on a traditional Mexican dessert.  These are Tres Leches Cupcakes presented by Simply Happenstance.
