Fingerling Potatoes & Sweet Peppers

I love when I see something on TV and I recreate it and it is really good.  I was working out in the gym in the office.  I watch cooking shows while listening to my music.  So I have to guess what ingredients are being used.  Kind of a reverse “Chopped.”  Today, I saw Anne Burrell make a side of fingerling potatoes and pickled peppers(?) I think.
My wife told me she had taken lamb chops out for my son and me.  I stopped at the store looking to round out my grilling.  So I bought fingerling’s and could only find marinated red & yellow sweet peppers.  Result, absolutely repeatable and repeatable for company I wish to impress.  Dumb luck!  That works.

Recipe
Fingerling Potatoes & Sweet Peppers:

  1. Wash and slice to about 1/4″ 8 fingerling potatoes
  2. Cover your 9″ skillet with olive oil and when warm add the potatoes and brown each side – about 8 minutes per side
  3. Slice about 6 of the yellow and red sweet peppers and add to pan
  4. After 3 minutes or so add about 1/3 of the juice from the sweet pepper jar and cook for another 2 minutes and serve.

    I love fingerling potatoes…delicious! I usually just do fresh herbs but I like your addition of the peppers!
