This sandwich tasted awesome.  However, it was so messy.  The faux Monterrey Jack velveeta cheese is too melty ultimately for a sandwich.  But it was gooey good.  I used the Old fashioned white bread I made and as you can see it browned perfectly.  We also had made some guacamole.  What a nice complement to the cheese.  The flavor combination is definitely worth trying to recreate again.

Ingredients:

  • 3 – 4 slices of the cheese
  • 2 pieces of bread
  • 2 – 3 spoonfuls of gaucamole
  • butter for the griddle surface

Directions:

Heat the griddle to 325 degrees.  Spread the guacamole on the bottom piece of bread and top with the cheese.  Take the stick of butter and rub it on the griddle surface.  Next, start the sandwich cheese side down on the griddle.  Cook for 3 minutes or so and then flip.  Cover with a top and cook for another 3 minutes.  Enjoy!
