This recipe and dish is 100% my wife. Â It may be her first post on my blog. Â Move over Molly! Â AJ loves nachos as do my kids. Â This recipe is so her. Â She grabbed everything leftover in the fridge and leftover from a Mexican dinner I had created. Â Where I am grabbing things from the fridge a la “Chopped” and making them go together. Â AJ is grabbing things from the fridge and just throwing them together. Â That is Tuesday’s Tip. Â Use everything in the fridge and have a go to recipe. Â Nachos are such a great catchall for Mexican leftovers. Â But you know what? Â It works. Â It is just like AJ. Â She just throws things together, including herself, and it/she turns out beautiful. Â She, oh, I mean this dish is just awesome. Â These everything nachos recipe I have provided below is very loose. Â AJ never measures anything. Â You know I am right AJ.
Ingredients:
- Fill a tray with tortilla chips
- Â handful of Mexican cheese
- handful of black beans
- 1/2 cup Ground Turkey (taco spiced)
- 1/2 cup green, red and orange peppers
- 1/4 cup tomatoes
- 2 tbsp green onions
- Cilantro for garnish
Directions:
On a baking tray, begin by spreading out the chips across the whole bottom. Â Begin to layer all the ingredients. Â Start with the heavier ingredients like the ground turkey. Â Then just throw the rest of the ingredients on in any order you want. Â The peppers and cilantro were added last. Â Bake in a 325 degree oven for 8 – 10 minutes.

I love this post. It is so REAL. What an excellent way to use leftovers. I would never have thought of nachos. A artisan pizza maybe, but not nacho. Nachos says ‘Party Time’, so they are fun to eat.
