Everything Nachos

This recipe and dish is 100% my wife.  It may be her first post on my blog.  Move over Molly!  AJ loves nachos as do my kids.  This recipe is so her.  She grabbed everything leftover in the fridge and leftover from a Mexican dinner I had created.  Where I am grabbing things from the fridge a la “Chopped” and making them go together.  AJ is grabbing things from the fridge and just throwing them together.  That is Tuesday’s Tip.  Use everything in the fridge and have a go to recipe.  Nachos are such a great catchall for Mexican leftovers.  But you know what?  It works.  It is just like AJ.  She just throws things together, including herself, and it/she turns out beautiful.  She, oh, I mean this dish is just awesome.  These everything nachos recipe I have provided below is very loose.  AJ never measures anything.  You know I am right AJ.

Everything Nachos

Ingredients:

  • Fill a tray with tortilla chips
  •  handful of Mexican cheese
  • handful of black beans
  • 1/2 cup Ground Turkey (taco spiced)
  • 1/2 cup green, red and orange peppers
  • 1/4 cup tomatoes
  • 2 tbsp green onions
  • Cilantro for garnish

Directions:

On a baking tray, begin by spreading out the chips across the whole bottom.  Begin to layer all the ingredients.  Start with the heavier ingredients like the ground turkey.  Then just throw the rest of the ingredients on in any order you want.  The peppers and cilantro were added last.  Bake in a 325 degree oven for 8 – 10 minutes.

    Nachos are one of my all time favorite foods. As long as there is no bright orange liquid cheese involved. 🙂
    These look right up my alley!

    I love this post. It is so REAL. What an excellent way to use leftovers. I would never have thought of nachos. A artisan pizza maybe, but not nacho. Nachos says ‘Party Time’, so they are fun to eat.
