El Yucateco Quesadillas

This post was designed to promote, or should I say, test these El Yucateco Chili Habanero Sauces.  I like to think I like spicy but these have some bite.  I mean some bite.  But bite does not mean without flavor.  The red sauce is definitely hotter than the green sauce in my opinion.  My hot sauce recipe is easy to execute.   I came up with a traditional recipe that I thought would enable me to highlight the habanero in the sauces and really figure out if I like the sauces or the red or green sauce.  These El Yucateco Quesadillas were definitely tasty and showcased the sauce.  I love the colors that the sauces added to these quesadillas.  Do you agree?  Do you like to add sauce to your quesadillas?

You can find these El Yucateco sauces at most grocery stores.  I went to Target and found them in an aisle 2 down from the refrigerated section.  They were on the top shelf.  I do not often shop at Target for my groceries but I found everything I needed for my quesadillas and I had choices for ingredients and choices.

Ingredients:

  • 2 tortillas
  • 1/2 – 3/4 cup of shredded quesadilla cheese
  • 1/4 each red, green & yellow pepper
  • 2 tbsp corn oil
  • 1 -2 tsp green & red El Yucateco Habanero sauce
  • 2 oz cajun spiced chicken, diced

El Yucateco Habanero Sauce

Directions

Heat a skillet on medium high heat.  Add the oil and bring to a simmer.  Place one of the tortillas into the oil.  Top with the cheese and then spread the chicken and peppers over the cheese.  Top with the second tortilla.  Cook for 2 – 3 minutes.  The cheese will begin to melt and the bottom tortilla will brown.  Flip the tortilla to the second side.  Cook again fro about 2 minutes.  Put a top on the skillet and cook for another minute or two to get a really good melt on the cheese.  Remove from the pan and place on a cutting board.  Using a pizza cutter, cut the quesadilla into 5 or 6 triangles.  Next, take a tsp and pour the sauce onto the spoon.  Drizzle the green sauce across the quesadilla.  Finish by repeating with the red sauce and I added the red sauce in a mostly perpendicular fashion.
