Duck Hash

My wife calls it “Chopped” when I make recipes like this one.  I am trying to use up things from previous meals – I hate to let anything go to waste.  She also calls me a human garbage can because I eat all the leftovers.  We all know, so many things taste better the next day.  So I am being frugal or am I actually being selfish because it all tastes so good.  Please comment here guys, who likes leftovers?  You know you do.
 
So I had made 2 types of duck: one, smoked and one in the oven.  I had served them with roasted potatoes.  What should I do with these leftovers.  How about a hash!  Add some onions and peppers, red, green and jalapenos to the potatoes, fry them in a skillet, combine and top with an egg and Voila.

Duck Hash:
No measurements here.  I pulled the remaining duck I had, quartered a bunch of the potatoes and added 1/4 each of a red and green pepper and 1 jalapeno.  I started with the potatoes in the skillet so I could get a good crust.  Probably used 2 tbsp olive oil.  As they started to change color, I first added the onions.  Probably cooked it for 10 minutes at this point.  Then, I added the peppers.  I added a little Lawry’s seasoned salt while cooking.  When the potatoes were done, I cooked a fried egg in a separate pan.  Enjoy!

    Your hash looks delish!!!

    I love leftovers. As a matter of fact, I sometimes prefer leftovers to the actual main meal. I am just starting to be braver about throwing stuff in the pan and seeing what cooks up. One of my New Year’s resolutions last year was to waste less food. So, I’m with you in that I am very frugal, want to waste less food, and it’s really fun to see what one can come up with using leftovers.
