Jump to RecipeMy potato salad is a real winner. I first made this recipe a while back for a family BBQ. It was a huge hit. The only thing I can’t tell you is if I liked it more than the rest of the family. I am not sure what makes this potato salad so tasty. The combination of the ingredients is a winner. I have also really come to enjoy dill – which is the key ingredient in this recipe.

The dish has 8 ingredients – 4 for the dressing and 4 for the potato texture. What I like about the potatoes is they show up in two ways in this recipe. The potatoes are initially boiled to AL DENTE. But the key is the potatoes are incorporated in 2 ways. A portion of the potatoes are lightly mashed and the other portion is chopped.
The one thing I did differently with this recipe was the addition of the hard boiled eggs. Thanks for your help AJ. My sous chef, AKA my wife, is the hard boiled egg maker in the family. I love what they add to the dish. Lastly, the cornichon pickles are the best pickles to use for the recipe.

Dill Potato Salad
Creating the perfect summer side dish with the Dill Potato Salad. The freshness that comes from the dill is the key to this recipe.
Ingredients
- 3 Lbs Potatoes
- 8 whole Eggs hard boiled
- 2 Whole Garlic Dill Pickles (homemade) small dice
- 1 Bunch Dill rough chop
- 1/2 Cup Mayonnaise (homamade)
- 3 Tbsp Yellow Mustard
- 2 Tbsp Pickle juice
- 2 Tsp Salt
- 1 Tbsp Black pepper
- 2 Tsp celery salt
- 2 Stalks Celery small dice
- 1 Tbsp Apple Cider Vinegar
- 1 Tbps White vinegar
Instructions

Boil the potatoes until fork tender. Let cool. Once cool, peel the skins. Next, take a fork or masher and lightly mash one-quarter of the potatoes. Do a rough chop on the remaining potatoes.
Next combine the wet ingredients, mix well set aside.
Add the the veggies and chopped eggs to the potatoes. Mix reasonably well. Finish by mixing in the dressing. Make sure all the potatoes are well coated.
Garnish with some of the fresh dill.
Serve and enjoy!
