This recipe is adapted from a Bobby Flay recipe.  My style and  tastes are most similar to Flay’s flavors (say that 3 times really fast).  This corn recipe is a great side.  I spice it up with smoked paprika and ancho chili powder.
Recipe
Creamed Corn with Sweet Red Peppers:
- Add 2 tbsp olive oil and 1 tbsp butter to pan on medium high heat
- Saute 1 medium yellow onion, 1 red pepper and 1/2 a green pepper until softened and then add 2 tsp each smoked paprika and ancho chili powder
- Add 3 cloves garlic and cook for 1 minute
- Add 3 cups corn (frozen or fresh – depending on season – it’s Chicago here so you figure)Â
- Add 1/2 cup of lite half and half and bring to a boil and reduce to simmer and serve
