I am very willing to challenge myself in the kitchen and seek variety. As my regular readers know, I tend to do recipes with a lot of steps. I do not mind spending all day in the kitchen. My Citrus Queso Salad recipe is embarrassingly easy recipe that takes like 5 minutes to put together.

A few appetizer recipes that I have made in the past that are good for entertaining include:

This appetizer recipes is one of those recipes where the ingredients speak for themselves. The dish is literally assembled by combining all of the ingredients and mixing well. Then, the salad/dip is placed into the fridge for 30 minutes. The most complicated part of the recipe is how to serve it. As you can see, I used a mold to form the ingredients into a cylindrical shape. I think the presentation was quite nice. I liked the tortilla chip placed on the top and the lime. All and all, a good entertaining idea that will not take you long to prepare.

Ingredients

  • 10 Ounces Queso fresco
  • 10 Ounces Cotija cheese
  • 1/2 Cup Jicama small dice
  • 1/4 Whole Seedless cucumber small dice
  • 1/2 Cup Cilantro rough chop
  • 1/3 Cup Red onion small dice
  • 12 Whole Grape tomatoes small dice
  • 1/4 Cup Seedless Cucumbers small dice
  • 1 Whole Jalapeno small dice
  • 1 1/2 Whole Limes juiced
  • 1 Tsp Salt
  • 1 Tsp Lemon Pepper

Instructions

  1. Mix all the ingredients in a bowl. Place in the fridge for 30 minutes.

    Serve with tortilla chips.

    Enjoy!
