Chicken Jalapeno Brie Sandwich

When my wife and I were on a grocery run yesterday, she saw a jalapeno brie on sale for 1/2 off.  She bought it to have with crackers.  I saw it as opportunity for a fun lunch.   I had frozen the extra loaf of Amish Bread I made a few weeks ago.  I needed a good bread for grilling.

I searched the fridge for a good ingredients to complete the concept.  What I found was BBQ sliced chicken, jalapeno red berry jelly and arugula.  Good simple ingredients loaded with flavor so you do not need anything else.

Recipe
Chicken Jalapeno Brie Sandwich:
Ingredients:

  • 2 slices Amish Bread
  • 5 slices BBQ chicken
  • 2 slices jalapeno brie cheese
  • handful of arugula
  • 2 tbsp jalapeno red berry jelly
Directions:
Heat your griddle to 325 degrees and turn your oven on to 325 degrees.  Put the sliced chicken on one side of the bread and the jalapeno bread on the other side.  Melt some butter on the griddle and place the sandwich open face on the griddle.  Cook for about 2 minutes so each side of the bread gets nicely browned.  I put a pot cover over the cheese to help it melt. 
Move the jalapeno brie half to a baking tray and put in the oven for 2 – 3 more minutes – when the brie starts to become runny.  Remove from the oven and top the sandwich with the jelly and the arugula.  Cover with the melted cheese half.  Enjoy!
