Cheesy Jalapeno Poppers

How about a little kick with a sweet compliment.  People assume that all peppers are hot.  The jalapeno is the first in the family as you go up the hot spectrum.  So it has a little kick without being too over powering.  This appetizer is quite simple to prepare and looks really good.  I found this recipe on “A Cozy Kitchen.”

 Recipe
Fried Cheesy Jalapeno Poppers:

  1. Make a slit down the middle of each jalapeno being sure to keep the stem and using a small spoon scoop out the membrane and seeds
  2. In a small bowl mix together 6 oz of softened cream cheese, 1 3/4 cups of monterey jack, 1/4 tsp cumin and a pinch of salt and pepper
  3. Warm your deep fryer or pot to 350 degrees and line a baking sheet with paper towels
  4. In batches, dip jalapenos in flour, egg, panko and repeat egg and panko.  Then immerse in deep fryer for 2 – 3 minutes
  5. Transfer to paper towel to drain and serve immediately
