Cheddar Cheese and Smoked Gouda Tater Tots

My daughter is home from College for break and she sent me a bunch of recipes that we would try together.  This Cheddar Cheese and Smoked Gouda Tater Tots is a keeper.  These are grown up tater tots and the cooking method is totally healthy.  It is amazing how certain recipes are so amazing when only a few ingredients are used.  This cheddar cheese and smoked gouda tater tots is one such recipe.  They key was our addition of smoked gouda.  We love smoke in the house and that definitely goes with the cheese too.

Ingredients (adapted from the Home Cooking Adventure):
  • 4 russet potatoes, skinned
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/4 – 1/2 smoked gouda cheese, shredded
  • 2 green onions, chopped
  • 1 tsp salt
  • 1/2 tsp black ground pepper
  • olive oil to drizzle on top

Ingredients

Directions:
Scrub the potatoes well and boil with their skin on until tender.   A fork should go in easy.  Then, they are done.  Remove from water and set aside to cool.  Preheat oven to 450F.  Line a baking sheet with Silpat baking mat or parchment paper.  With potatoes chilled, peel off the skin and then grate using the big hole side of the grater.  Transfer them to a large bowl.  Add in the shredded cheese, onion, salt and pepper and stir to combine.

Scoop up about 1 tbsp of the potato mixture into your hands and form into cylinders about 1 inch long.  Just kind of roll them.  I didn’t have any idea how this would work but it really formed quite easily.  Place the tots on baking sheet and repeat until all the tots are made.

Tater Tots on Tray

Drizzle olive oil over the top of tater tots. Bake for 15 minutes, flip them over and bake another 15 minutes until golden brown and crisp.

    Good Morning Peter, Do you know I have never heard of Tater Tots…. but look what I am missing. I adore potatoes so I am looking forward to trying your recipe…. it will have to be this weekend, because I cannot wait to try them.
