So the second use of the candied ginger was to mix into vanilla ice cream (short cut I know).  So essentially the vanilla ice cream was infused with the candied ginger syrup I made.

Recipe
Candied Ginger Vanilla Ice Cream:

  1. Take 1 carton vanilla ice cream and let soften
  2. Take 1 cup of the candied ginger syrup (see Candied ginger bundt cake recipe) and mix in
  3. Add 6 – 8 diced up pieces of the candied ginger and re-freeze; serve and enjoy.

There’s nothing better than ice-cream during the summer.
