For our Superbowl party, we were making a number of meat, or man friendly dishes.  So I needed to make something that would provide all of us, especially the ladies (non-meat eating crowd) an alternative.  We love  blackened salmon.  I had made a Steakhouse rye with this dish in mind.  I added a roasted red pepper sauce and topped this sandwich with arugula.  This is a very nice sandwich – meaty, peppery and sweet.
The salmon was prepared a day ahead as was the roasted red pepper sauce. Â So on game day, I needed only to assemble the sandwich on game day and not spend a lot of time cooking.
