I have learned a lot from watching cooking shows and I watch them all the time.  Starting dishes in a skillet and finishing in the oven enables you to create a dish with a great exterior, tender center and cooked evenly throughout.

Recipe
BBQ Salmon:   Please refer to BBQ Chicken post for sauce recipe

  1. Turn stove on high and let skillet get real hot.  Add oil and then put in fish skin side up.
  2. Sear for 2 – 3 minutes.
  3. Turn fish over and smother with BBQ sauce
  4. Transfer to 325 degree oven for 6 – 7 minutes depending on thickness.
  5. Plate and serve
