I saw this recipe from LeasCooking and had to try it. Â What makes this blogging world so cool is that our connections are so wide. Â Lea is from Russia.

It is really quite simple to make but oh so good. Â Simply saute carrots and then top the fish with a cream mixture and bake for 50 minutes and voila.
Recipe
Baked Tilapia in a Cream Sauce:
- !st step is to shred 4 carrots and saute in 1 tbsp of olive oil until they brown a little
- Next, prepare the sauce by combining 1 pint of buttermilk (original recipe calls for whipping cream), 3 tbsp of mayonnaise, 1 tsp each salt, pepper, ground coriander and ancho chili powder (this was an addition) and top with a good handful of parsley
- Dredge the fish in the cream sauce and layer them in a clay pot; then top with the rest of the sauce, spread the carrots over the top and top with the parsley
- Bake for 50 minutes uncovered at 350 degrees and you are done. Â
