Ancho Chicken & Smoked Gouda Sandwich

I find that concocting sandwiches takes as much, if not more, creativity than some dinners.  I had chicken that I had grilled with an ancho rub.  I sliced the chicken and added it to a saute pan with some broth and finished by melting the cheese in the pan.  I bought really good rolls from the store and Ajver red pepper spread to add more flavor to the sandwich.

 Recipe
Ancho Chicken & Smoked Gouda Sandwich:

  1. Slice the chicken and add to a saute pan with 1/4 cup of broth and warm for a few minutes
  2. Add 6 slices of smoked gouda and place a lid on the pan to help the cheese melt
  3. Slice open the roll and spread a generous amount of the Avjer pepper spread and top with a healthy portion of spinach leaves
  4. When the cheese has a decent melt, use a spatula to place the chicken cheese mixture on top of the bread and spread and dig in.
